The Role
As Restaurant Manager, you will have overall responsibility for the day-to-day operation and performance of the restaurant. You will lead from the front, ensuring exceptional guest experiences, strong commercial performance and a motivated, high-performing team.
You will work closely with senior management to deliver business objectives while maintaining the high standards and values that define Din Tai Fung.
Key Responsibilities
Restaurant Operations & Performance
- Take overall responsibility for the successful operation and performance of the restaurant.
- Analyse and drive sales, profitability and overall business performance.
- Manage budgets, forecasts, expenses and cost control to maximise profitability.
- Monitor stock levels, inventory and supplies to ensure an efficient operation.
- Plan staffing, rotas, shifts and service flow to deliver an effective operation.
- Prepare and maintain accurate operational, sales and staffing reports.
Guest Experience & Brand Standards
- Deliver consistently high standards of food, service, hygiene, health & safety and presentation.
- Ensure Din Tai Fung brand values and service standards are consistently delivered.
- Lead the team in creating exceptional guest experiences and exceeding customer expectations.
- Respond confidently and professionally to guest feedback and complaints.
- Ensure the restaurant, facilities and equipment are clean, safe and well maintained.
People Management & Development
- Recruit, train, coach and motivate team members to achieve high performance.
- Lead and manage front-of-house teams, including agency staff when required.
- Provide regular feedback, performance support and development opportunities.
- Communicate Din Tai Fung values and service themes across the team.
- Create a positive, inclusive and high-performing team environment.
- Ensure all team members are trained in line with company SOPs and service standards.
- Maintain accurate training and staff records.
Compliance & Processes
- Ensure all health & safety, fire safety and operational requirements are met.
- Maintain and regularly review SOPs and operational procedures.
- Ensure payroll, stock control and inventory processes are completed accurately and on time.
- Maintain appropriate records and ensure the restaurant operates in line with company policies and procedures.
Skills & Experience
- 3+ years’ proven experience in a similar Restaurant Manager role within a high-volume or premium hospitality environment.
- Strong understanding of restaurant operations, sales, profitability, budgets and cost control.
- Proven experience leading, coaching and developing a high-performing team.
- Excellent customer service and communication skills, both written and verbal.
- Strong organisational, planning and problem-solving skills.
- Experience using restaurant systems, booking platforms and workplace IT.
- Experience organising events and functions.
- Hospitality-related degree or equivalent experience.
- Excellent command of English, both written and verbal.
- Flexible, self-motivated and able to work effectively in a fast-paced, high-performing environment.
- A hands-on leadership approach with the ability to work independently and as part of a wider team.
